Veggie Patties

The battle between children and vegetables is as old as time. Don’t tell me you don’t feel like ninja-masters trying everyday to camouflage vegetables into everything your little ones eat.

Burger is one of my kids favorites, so this is the deal we make: I prepare the patties and they get to fill their burger with whatever they like. A win to win scenario.

When the burger trick doesn’t work, time for plan B: Make your kids favorite dip. Studies have found that kids are more likely to eat their veggies if they’re served with dip.

A very refreshing dip for vegetables is “tzatziki”. My kids love it and they have so much fun dipping in their veggie patties. Try this trick with your kids favorite dip.

Portion: 10 medium size patties

How to make veggie patties, vegetable patties


1 eggplant

2 zucchinis (medium size)

1 red pepper

1 onion

5 mushrooms

100gr (0.8 cup) flour

grated cheese

5 tsps. olive oil


How to do it

  1. Grate all the vegetables at your food processor.

  2. Take a deep nonstick pan and sauté your vegetables in 5 batches. Add to the pan one teaspoon olive oil for each batch.

  3. Remove from heat and transfer to a bowl.

  4. Add the flour and mix with a spoon.

  5. Let the mixture aside to chill or refrigerate for 10 minutes.

  6. Preheat oven to 200* C (390* F) Fan.

  7. Line a baking pan with some parchment paper.

  8. Form medium size patties, place them in the pan and sprinkle each one with some grated cheese.

  9. Bake for 20 minutes.



  • If the mixture sticks on your hands when you form the patties, spread on your hands a couple drops of olive oil.

  • Add a pinch of salt while sautéing, if the cheese you sprinkle on the patties is not too salty.

  • You can make veggie burgers.
