Feta Cheese in Phyllo Parcels with Honey

If you are an appetizer kind of guy or gal, this is the easiest little appetizer you can make at home. The famous Greek Feta cheese wrapped in phyllo pastry. Baked or fried, enhance the Feta's signature saltiness by adding some sweet flower honey. We love to pair these feta parcels with a slice of a sweet watermelon. God I love summer!

Ingredients

 

1 sheet of phyllo dough

3 pieces of feta cheese (0.5cm thick)

100 ml extra virgin olive oil for frying

2 tablespoons honey

sesame

How to do it

  1. Spread out the phyllo sheet and cut them in three, lengthwise.

  2. Brush with Greek extra virgin olive oil.

  3. Place a piece of feta cheese at the bottom part of the phyllo and start to wrap it by folding it over again and again. Just before you finish the wrapping fold the sides over and keep wrapping till the end to make a little parcel!

  4. Continue with the other two pieces

  5. Wrap them in a plastic membrane and freeze them for at least one hour.

  6. Place a pan over medium heat.

  7. Add a generous amount of Greek extra virgin olive oil and heat.

  8. When the oil is hot enough place the feta parcels in the pan, seam side down.

  9. As soon as they become golden on the first side, flip them over and fry them until they are golden and crunchy on the other side too.

  10. Transfer them to a plate lined with some paper towels. Let them drain for about 2 minutes.

  11. Drizzle with honey and sprinkle the sesame seeds over it.

Tips

  • Make ahead your feta parcels and freeze them. Take them out of the freezer when you like and cook without defrosting them.

  • Do not wrap the parcels too tight. Leave some air inside When folding try not to rip the phyllo.

  • To check if your oil is hot enough dip a small piece of phyllo in to the oil. When it starts to sizzle, you are ready to fry.

  • You can bake the feta parcels in the oven (preheated at 180oC/350oF) fan for 20 minutes. If so, do not forget to brush the outside with olive oil and place them with folded sided on the bottom on a pan.
