You do not have to be a cooking expert to grate some eggplants among with other veggies in your food processor, sauté the mixture with olive oil for 10 minutes, combine with the rest of the ingredients in a large bowl and bake in the oven. This is another traditional Greek pie recipe that can be made without phyllo dough. Light, healthy, easy and kid-friendly.
To succeed though, you need to pick the best quality eggplants, which is easy because this is the season you can find the sweetest eggplants ever.

Cooking time: 30-40 minutes
Serves: for 6-8
4 medium size eggplants, (grated)
1 large onion (finely chopped)
1 clove garlic (minced)
1 green pepper (finely chopped)
1 cup self-rising flour
1 cup milk (preferably with reduced fat)
1/2 cup olive oil
2 cups feta cheese, crumbled
2 tablespoons dry oregano
1 cup parsley (finely chopped)
salt (according to taste)
pepper (according to taste)
How to do it:
Remove the peel of your eggplants using a peeler.
Grate them using the large blades of a cheese grater, or your food processor.
Use your food processor to grate the onion, the garlic and the pepper too.
Place a pan over high heat. Add the olive oil and when it gets very hot add the grated eggplants, the onion, the garlic and the grated pepper.
Let the mixture sauté for 10 minutes until the eggplants are golden.
Remove from heat and set aside for 10 minutes so the mixture can cool a bit.
In the mean time beat the eggs in a large bowl.
Add the rest of the ingredients and mix to combine.
Brush a baking pan (15*25 cm) with olive oil and dust it with flour.
Bake at preheated oven 170-180oC (330-350oF) for 30-40 min (until the surface is golden).
Try your feta cheese before you use it. If its not too salty, add to the mixture 1/2 tablespoon salt.
If you use a glass Pyrex pan you don't have to brush it with olive oil and dust it with flour.
You can substitute the self-rising flour with 1 cup all-purpose flour+11/2 teaspoons baking powder+ ½ teaspoon salt.
I do not add pepper (not my kids taste) but if your kids like it go ahead.
