Grape Must (aka Petimezi) is one of the world’s oldest 100% natural sweeteners, which needs no refrigeration and keeps forever. It is rich in antioxidants, vitamins A, B, and C, minerals, potassium, iron, calcium, and magnesium. The ancient Greeks were using “petimezi”for coughs and colds. It is also said that if you drink every morning grape must diluted in a glass of water you get a lot of energy.
For those who never heard of it: Grape must is what remains from the grapes juice if you boil it at low temperature for more than an hour, so that all the water is evaporated. Ash could be added too. A pure product you can make yourself at home. If you can find organic ripe grapes the outcome should be even better.
What else can you do with “petimezi”?

Preperation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 20 medium size cookies
600 gr. or (21.2 oz.) all-purpose flour
1 tsp. baking powder
1 ½ cup grape must
¾ cup (olive oil or sunflower oil)
1 ½ tsp. ground cinnamon
1/4 tsp. ground cloves
½ cup fresh orange juice
½ tsp. baking soda
How to do it
Take a big bowl.
Add the orange juice and the baking soda. Stir with a spoon until the soda is diluted.
Add into the same bowl the grape must, the olive oil, ground cinnamon, ground cloves and mix well.
Take another bowl and sift the flour together with the baking powder.
Slowly add the flour mix into the liquids. At first stir with a spoon and then knead by using your hands until all the flour mix is absorbed. The dough should not stick in your hands. It must be oily and tight.
Line a parchment paper on a baking tray. Shape the dough into small cookies (at least 20) and place them on the baking tray.
Bake in a 180oC (350oF) preheated oven (air) for 15 minutes.
Remove the cookies from the baking sheet and allow them to cool on a wire rack.
You can let your dough rest for 15 minutes before you shape it into cookies
You can add 80gr. black raisins to your grape must mixture, if you like.
The “grape must” should be in room temperature. Do not use it directly from your fridge.
