Ideal cookies if you are on a vegan diet or for the fasting period. Perfect and easy if you want to have some fun making them with your kids. Pair them with your morning coffee, your evening tea, or a glass of milk. Note that it is impossible for someone to taste just one.

120 g olive oil
140 g powder sugar
120 g fresh orange juice
1 tablespoon grated orange zest
2-teaspoon baking powder
1-teaspoon baking soda
400 g all-purpose flour
How to do it
Combine in a bowl the olive oil, orange juice, the powdered sugar and the orange zest, using your hands.
Add the flour, the baking powder and the baking soda and mix them until you form a soft dough.
Place the dough in your refrigerator for 30 minutes to thicken.
Take it out of the fridge and shape into rings.
Line a baking pan with parchment paper and place the cookies in the pan.
Bake at preheated oven (170oC / 340oF air) for 15-20 minutes, until golden.
