This Thursday all Greeks are celebrating Tsiknopempti (Charred/Smokey Thursday) as a part of the traditional celebrations for Carnival. Large amounts of meat are traditionally consumed this day prior to the arrival of Lent, the fasting season leading up to Easter.
Who likes BBQ Ribs? I have the perfect marinade for you today. Ideal for BBQ ribs, but also any kind of grilled meat.
For 1,5 kg (3,3 lb) pork ribs:
3 tbsps olive oil
1 tablespoon thyme
1 tablespoon ginger
1 tablespoon ground coriander
6 cloves of garlic
1 tablespoon sesame seeds
How to do it
Use a food processor and mix everything until completely combined.
Place the ribs to a bowl with the marinade and mix to completely coat.
Cover with plastic wrap and refrigerate for 24 hours.
Ready to grill!!
